  • 4-5 lb beef brisket
  • 3 tablespoons kosher salt
  • 2 tablespoons smoked paprika
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1/4 cup olive oil

  1. Preheat your sous vide machine to 155°F (68°C).
  2. In a small bowl, mix together the kosher salt, smoked paprika, onion powder, garlic powder, black pepper, dried thyme, and dried rosemary.
